Chicken Salad by Camille DeCaro
3 large pieces of roasted boneless
breasts (roast in the oven with olive oil drizzle, pepper and Ed Hitzel's
Everything Spice. Make 12 of them and have them all week to use in many
ways.) Place low sodium chicken stock in the oven pan to insure moistness.
One half cup of low fat mayonaisse
2 tablespoons of whole grain mustard
3 ribs of celery and 1 small onion
chopped very fine
One half teaspoon of black pepper
1 teaspoon of Ed Hitzel's no salt
Everything Spice
Secret ingredient one half packet of
sugar substitute sweetener, a nice balance of sweet and savory
Chill for one hour and serve on
chilled juicy celery ribs to satisfy the need for something crunchy and red
